Iron reacts over time with the oxygen in its environment. If the environment contains relatively little water, corrosion is not a big problem. It produces iron (III) oxide, which is itself very inert and thus stable. It forms a thin layer on the iron and protects it from further corrosion. The phosphoric acid reacts with the rust and converts it further. In this case, iron (III) phosphate and water are formed from iron hydroxide and phosphoric acid. In turn, since iron (III) phosphate does not have the porous structure of the rust, the material loses the excess volume again and settles on the previously rusted workpiece as a likewise unreactive protective layer.
