What exactly is meant by sharpening steel?

Sharpening steel, which is also referred to as Abziehstahl, is used primarily for sharpening knives. In order to sharpen the blades satisfactorily, the steel must therefore have a certain hardness, this unit is also called Rockwell (HRC = Hardness Rockwell). Depending on the manufacturer, the sharpener a hardness of 60-70 HRC, since most knives have a hardness between 55-65 Rockwell. Of the sharpener itself can be subdivided into different types: straightening steels and cutting steels. For the sharpening of very sharp knives the judging becomes sharpener used: by a particularly polished / micro-fine surface, the knife is not ground, but directed. Thus, the knife loses very little of its sharpness, no material is removed, but set up again. This property gives the judging sharpener also his name. Teaching sharpener is mainly used in gastronomy or other professional fields (meat processing, butchery) its use. The second type, the cutting steel, can be found in most households, as they are also available for little money. The coatings of this steel range from sapphire and diamond to ceramic or stone. When sharpening the knife, material is removed to ensure optimum sharpening. Optimum use of both types of steel is achieved by applying the knife to the steel at an angle of approximately 20 degrees. From the handle of the knife (handle) to the tip of the steel is moved with slight pressure (also referred to as whipped). This should be done several times, even on the back of the knife.

Which products are beneficial?

What the sharpening steel is suitable for was described in the upper section. Now a small overview of suitable products should be given, which can be used for knife whetting, because the selection is very large. To get a rough overview, it is advisable to look in portals such as Stiftung Warentest etc. For example, the sharpening steel from the comparative winner WMF „Spitzenklasse Plus“ is also recommended especially for beginners: the quality is high-quality and the product was manufactured in Germany. It is also good in the hand. However, one must be careful when choosing the knives to sharpen, as the sharpening steel should not be used for serrated knives. As a beginner, you should get more information. Also with a very good result, the sharpening steel of the brand „Gemini“ cuts off. Here especially the good sharpness result is emphasized. Also the easy Händeling is praised here, because the product lies well in the hand. The sharpening steel of „Wüsthof“ also convinces by easy handling, as well as a quick sharpness result, by a good and firm grip ensures a safe use. Another model that has made it to the top places, is another of WMF: the WMF „Grand Gourmet“ convinced with its safe and easy use, moreover, it is also dishwasher-safe. It should be noted again that the steel is only to be used for knives with a straight cut. However, it is recommended to use these for already sharp knives, but not for dull ones. So if you want to sharpen a very blunt knife, you should resort to sharpening steel, which consists of ceramic. Which products are available here? Among other things, such as the „Wüsthof 4456 ceramic sharpening staff, J 3000“, which is very easy to use and also sharpens blunt knives optimally. The handle is ergonomically shaped and allows safe handling. An alternative is the „Kyocera 334900 ceramic grinding rod CSW-12“: with its two different surfaces (coarse and fine) different knives can be sharpened. When blunt knives get sharp again, the rather rough side is recommended. In several customer reviews the easy operation of the Schärfestabs is praised. Even the aforementioned company „Gemini“ offers a ceramic Wetzstab. The model „Gemini 32513231 Ceramic Wetzstab“ is also popular with customers (including Amazon). Gentle yet effective, the knives are sharpened. However, you should be careful, because the rod is apparently sensitive to impact, so when it falls down, the surface can be damaged.
